Chocolate Chip- Banana- Zucchini Muffins

1 C mashed bananas (about 3 medium)
¾ C shredded zucchini
1 C sour cream (FAT FREE, of course. Plain yogurt works too.)
¼ C margarine
1 1/3 C sugar
2 eggs
1 tsp vanilla extract
2 C all purpose flour
1 tsp baking soda
1 tsp baking powder
¼ tsp salt
½ C semi-sweet chocolate chips

Preheat oven to 350 degrees. Combine banana, zucchini, and sour cream. Set aside. In a large bowl, cream together the margarine and sugar. Beat in eggs, one at a time, then stir in vanilla, and banana mixture. Combine dry ingredients in separate bowl and add to banana mixture. Stir until all is moistened. Stir in chocolate chips. Pour batter into muffin cups (¾ full). Bake for 18-20 minutes, or until toothpick comes out clean.

Plum Bread

2 C flour
1 ½ C sugar
1 tsp baking soda
½ tsp salt
1 tsp cinnamon
½ tsp nutmeg
½ tsp allspice
3 eggs
½ C plus 1 tbsp oil
1 small jar baby food plums

Mix all together. Grease pan. Bake 1 hour at 350. Use one larg loaf pan or 3 small pans

Topping:
1/3 C margarine
¼ C sugar
¼ C milk
1/8 tsp baking soda
½ tsp vanilla

Mix together all but vanilla. Bring to boil. Turn off heat and add vanilla. Pour over hot bread in pan.

Peanut Butter and Jam Muffins

2 C flour
½ C sugar
2 tsp baking powder
½ tsp baking soda
1 C creamy peanut butter
½ C light corn syrup
2 eggs
1 C milk
Strawberry jam

Mix dry ingredients in medium bowl. In large bowl add peanut better and syrup until smooth. Beat in eggs one at a time. Slowly beat in milk. Add dry ingredients. Layer muffin tins 1/3 batter, 1/3 jam and top with 1/3 batter. Bake at 350 for 20 minutes or until toothpick comes out clean.

Orange Rolls

2 pkgs yeast
½ C water
½ C scalded milk cooled to luke warm
½ C sugar
1 tsp salt
2 eggs
½ C soft butter
41/2-5 C flour
1 tbsp orange peel

Filling/topping-
3 tbsp soft butter
1 tbsp range peel
2 tbsp orange juice
1 ½ C powdered sugar

Scald milk. Put milk in sauce pan over medium high heat, let milk come to boil around the edges not quite through the middle. Let cool to 105. Dissolve yeast in water. Add sugar, salt, eggs, butter, milk, and 2 ½ C flour beat until smooth. Add 2 more cups flour and up to ½ C more. Knead 4-5 min. cover double and let rise 1 ½-2 hours, punchdown. Roll out to 12x7 put half of filling inside. Let rise again 45 min to 1 hour. Bake 375 for 12-15 min, tope with the other half of the filling.

Mouthwatering monkey bread

3 tubes biscuits, 10 each
1 C white sugar
3 tsp cinnamon
1 stick butter

Open biscuit tubes and cut each biscuit into quarters. Melt butter, combine sugar and cinnamon. Dip into the butter then roll in the cinnamon sugar mix and stack dough in bundt pan. Bake 350 for 35 minutes.
To make even stickier do not dip in butter just roll in cinnamon sugar mix and put in pan but melt butter and ¾ c brown sugar until boiling. Pour mix over dough in pan and then bake.

Pear Bread

½ C Butter
2 Eggs
2 C Flour (a little less is OK)
½ tsp Salt
½ tsp Baking Soda
1 tsp Baking Powder
¼ tsp Nutmeg
¼ C Plain Yogurt or Buttermilk
1 tsp Vanilla
2 C Chopped Pears

Cream the butter and add sugar. Then add eggs one at a time. Mix dry ingredients in separate bowl and add to egg mixture alternately with milk. Fold in pears (not with mixer). Bake at 350˚ for 1 hour.

Poppy Seed Bread

3 C Flour
1 tsp Salt
1 ½ tsp Baking Powder
3 Eggs
1 ½ C Milk
1 C plus 2 Tbsp Oil
2 ½ C Sugar
2 Tbsp Poppy Seeds
1 ½ tsp Vanilla
1 ½ tsp Almond
½ tsp Butter flavoring

Bake at 350˚ for 50- 55 minutes. Spread on glaze (below) while still warm (but not hot).

Glaze
½ tsp Butter flavoring
½ tsp Almond extract
½ tsp Vanilla
¾ C Sugar
¼ C OJ

Indian Fry Bread

4 C Flour
1 Tbsp Baking Powder
1 tsp Salt
¼ C Sugar
Milk & Hot Water to make a sticky dough

Put on well floured surface and knead until smooth. Roll out thin and fry. Serving options include: favorite taco salad toppings, butter and powdered sugar, strawberries and whipped cream, etc.

Irish Soda Bread

4 C Flour
1 tsp Baking Soda
1 tsp Salt
¼ tsp Sugar
1 Egg
2 C Buttermilk (or add reg. milk to 2 Tbsp lemon juice to make 2 C)
2 C Reg. Raisins
2 C Golden Raisins

Mix in order given. Put into greased round layer cake pan. Cut cross (quarters) into top for bread to split on purpose. Bake at 375˚ for 1 hour. Serve with butter and/ or cream cheese.

Country White Bread

4 (1/4 oz.) pkgs. Active dry yeast
2 cups warm water
½ cup sugar
1 Tbsp. Salt
2 eggs, beaten
¼ cup vegetable oil
6 ½-7 cups all-purpose flour

In a large mixing bowl dissolve yeast in water. Add sugar, salt, eggs, oil and 3 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured board; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise until doubled, about 1 hour. Punch dough down. Divide in half and shape into loaves. Place in 2 greased loaf pans. Cover and let rise until doubled, about 1 hour. Bake at 375 for 25-30 minutes or until browned. Remove from pans to cool on wire racks.

Zucchini Bread

3 eggs
1 cup oil
2 cups sugar
3 tsp. Vanilla
1 tsp. Salt
1 tsp. Soda
1 tsp. Cinnamon
¼ tsp. Baking powder
3 cups Flour
2 cups grated zucchini
1 cup chopped nuts (optional)

Beat eggs, oil, sugar and vanilla well. Add dry ingredients. Stir in zucchini and nuts. Bake in 2 loaf pans or 10c. bundt pan for 50-60 minutes at 325.

Mix and let sit for 5 minutes:
2 ½ cups warm water (105-115)
2 heaping Tbsp. Yeast
2 Tbsp. Sugar

Gradually add:
6 cups flour
1 Tbsp. Salt
2 Tbsp. Canola Oil

Knead dough for 10 minutes. Divide dough in half and shape into loaves, tuck ends if needed. Sprinkle cookie sheet with cornmeal and place loaves on sheet. Let rise for 30 minutes, cut slits. Bake for 25 minutes at 400 degrees F.

Mix ½ cup water and 1 ½ tsp cornstarch
Heat until thickened. Brush loaves with this mixture. Bake 15 minutes and brush loaves again. Bake another 5-10 minutes.

1 ¾ C all purpose flour
2/3 C sugar
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 C mashed rip banana
1/3 C shortening, margarine, or butter
2 tbsp milk
2 eggs
¼ C chopped nuts

Heat oven to 350. Combine 1 cup flour, sugar, baking powder, baking soda and salt in large mixer bowl. Add mashed banana shortening margarine and milk. Beat with electric mixer on low speed until blended, then on high speed for 2 minutes. Add eggs and remaining flour, beat until blended. Stir in nuts.
Pour into greased 8x4x2 inch loaf pan and bake at 350 for 55-60 minutes.

Speedy Cinnamon & Sugar Twists

These breadsticks are really delicious & simple to make, since you use prepared frozen bread dough. Drizzle them with a vanilla glaze, out of the oven. They remind me of the yummy breadsticks you get at restaurants.

YOU WILL NEED:

1 loaf frozen bread dough
1/2 cup brown or white sugar
1 tablespoon cinnamon
1/4 cup butter, melted

VANILLA GLAZE:
1/2 cup butter, softened
2 cups powdered sugar
2 tablespoons milk
2 teaspoons vanilla
Cream above ingredients together. Drizzle over breadsticks, or use as a dip.

DIRECTIONS:
Thaw frozen bread dough for about 3 hours. Mix sugar with cinnamon. Cut loaf lengthwise into 4 strips. Cut strips horizontally in thirds, making 12 strips. Combine sugar and cinnamon. Roll each piece of dough in butter, then in sugar cinnamon mixture. Stretch and twist. Place on greased baking sheet and let raise 1 hour; bake at 400 degrees for about 12 minutes or until lightly browned; sprinkle with additional cinnamon & sugar. Enjoy!
