Spinach Salad

2 pkgs. fresh spinach
1 head iceberg lettuce
3/4 lb. grated Swiss cheese
3/4 lb. fresh mushrooms, sliced
1 cup dry cottage cheese**
1/2 lb. cooked bacon, crumbled

Mix spinach and lettuce together and when ready to serve add rest of ingredients.

**Tip: Dry cottage cheese is made by running cold water through regular cottage cheese in a sieve, then drain chunks on paper towels.

Poppy Seed Dressing
1 1/2 Tbsp poppy seed
3/4 cup white vinegar
3/4 cup vegetable oil
3/4 cup sugar
1 1/2 Tbsp grated onion
1/2 tsp salt
3/4 tsp dry mustard

Mix and pour over salad just before serving and toss.
