Zucchini Bread

3 eggs
1 cup oil
2 cups sugar
3 tsp. Vanilla
1 tsp. Salt
1 tsp. Soda
1 tsp. Cinnamon
¼ tsp. Baking powder
3 cups Flour
2 cups grated zucchini
1 cup chopped nuts (optional)

Beat eggs, oil, sugar and vanilla well. Add dry ingredients. Stir in zucchini and nuts. Bake in 2 loaf pans or 10c. bundt pan for 50-60 minutes at 325.
