6 Tbsp butter
1 C sugar
2 eggs
1 C pumpkin puree
1 C milk
1 ¾ C flour
1 tsp baking soda
1/4 tsp baking powder
¼ tsp salt
½ tsp pumpkin pie spice
Beat butter and sugar together. Add eggs. Then add pumpkin and half of milk. Combine all dry ingredients and add to creamed mixture. Mix in remaining milk. I also add milk chocolate chips. Bake in waffle iron. Serve with buttermilk syrup.
Buttermilk Syrup
½ C butter
1 ½ C buttermilk (or regular milk with 1 ½ Tbsp lemon juice added)
1 ½ C sugar
¾ tsp baking soda
3 tbsp light karo syrup
1 ½ tsp vanilla
Cook in a very large pot (it bubbles up about 3-4 times its volume). Keep stirring for 7-10 minutes at boiling temperature.
