Crepes

3 eggs plus 1 white
1 C milk
¾ C flour
½ tsp salt
1 tsp vanilla
1 tbsp sugar (opt)

Mix with wire whisk in order given. Add milk or flour as needed to adjust consistency. Fry in pan over medium heat. Fill/top with following items or as desired.

Cottage cheese filling:

24 oz cottage cheese
1 egg yolk
½-3/4 C powdered sugar
¾ tsp Cinnamon

Cooked apples, peaches, etc
Jam
Nutella
Fresh fruit
